Using MIDI you don’t record the audio output from your digital piano or electronic keyboard, but only a description of the notes that you played. Afterwards, you can convert this MIDI recording to MP3 or WAV.

The advantage of using MIDI is the small size of the files and the flexibility: you can tweak small mistakes before you commit the recording to audio.
